Lara de la Rosa is aiming to make eating plant-based easy and affordable through her bakery and Latinx social justice café.

Transcript

Lara de la Rosa: Coming from a Mexican-American family, I wanted to be able to make Mexican desserts that people could enjoy without having to harm any animals in the process.

I actually went vegan because I watched a documentary, and I was mostly plant-based before, but it wasn't until a couple of years later that I started to learn about the intersectionality of veganism and the way that the animal rights movement works alongside other social justice movements.

And that's what inspired me to open the bakery two years ago, because I wanted to make veganism more accessible as well as culturally relevant. The proceeds from the bakery get redirected towards the mutual aid organization, Casa del Xolo. We also have nighttime events which are marketed under Casa del Xolo. So we hope to create a kind of DIY art space as well as a space where activists can get together, strategize, share ideas, and work with the community directly. And I'm really excited about where we're going to go from here.
