Recipe: Chai Porridge with Caramelized Apples

Want to start your day feeling warm and cozy from the inside out? This chai-spiced take on your classic oatmeal porridge is the perfect beginning to a fall or winter day. With warming and immune-boosting ginger and cinnamon, and satiating oats, this recipe is worth waking up for.

Ingredients

  • 1 cup rolled oats
  • 2–3 cups any plant-based milk, such as almond, soy or coconut
  • 1 teaspoon chai spices*
  • Almond butter (or sunflower seed butter), to serve

Toasted Coconut Chips

  • ¼ cup coconut chips
  • 1 tablespoon maple syrup
  • Pinch of salt

Caramelised Apple

  • 1 apple, cored and chopped into 2cm cubes
  • 1 tablespoon coconut sugar

Directions

  1. To make the porridge, add the oats, milk and spices to a medium pot over high heat. Boil for 5 minutes while stirring occasionally. Reduce to a simmer for 15 minutes or until the porridge reaches your desired consistency. Add more milk or water for a thinner porridge.
  2. To toast the coconut chips, add all ingredients to a small saucepan over medium heat. Continuously stir until the coconut is fragrant. Set aside.
  3. To caramelise the apples, add the apple and sugar to a small saucepan over high heat. Sauté for 5 minutes, add a dash of water then reduce to medium heat. Cook until the apples have softened and turned golden brown.
  4. Divide the hot porridge into 2 bowls. Top with the coconut chips, caramelised apple pieces and a scoop of almond butter.
